The start of Prussia's campaign can be a little daunting, but once you get going it's an absolute blast. Alternatively, if you want to go to war with Poland, you can declare on Saxony, which will bring Poland into the war, but not any of Poland's allies. And since Poland has a protectorate with Saxony, if Poland declares war on you, Saxony will as well, so you can snatch them up at the same time. I would avoid taking Warsaw until you have a pretty strong army, though, since they tend to spawn some pretty nasty rebels. When fighting Poland, take West Prussia quickly so you can connect East Prussia to your capital. The good thing is, they almost always go to war with each other as well, so you can play them off of each other until you see a good opportunity to go on the offensive.
